Stargazer Lily Wedding Cake with lace ribbon and sugar butterflies

It's wedding season, and sorry to say I don't have enough time to post all the cakes we've been doing, although I try to put some of them up on Facebook when I get a chance!

This four tier white wedding cake has fondant lace ribbons around each tier and piped swiss dots. Light yellow sugar hydrangeas form small bouquets with the Stargazer lilies. The bride also requested yellow/orange sugar butterflies to finish off the decoration.

Inside is white cake with dulce de leche cream filling.

We delivered the cake to Bambu Lounge in Elizabeth NJ.

Drum Set Groom's Cake

A cake that was a long time in the planning: the Groom was a drummer and wanted to showcase his passion, rather than display a traditional white wedding cake at the reception. So we designed a replica of his drum set complete with cymbals and the Muppet Animal in the background!

We baked chocolate fudge cake with amaretto moccha and salted caramel buttercream, plus lemon cake with strawberry mousse and fresh strawberries. The front of the base drum had a Ying and Yang symbol, while on the reverse side we had the words "LOVE" in a font patented by one of his best friends.


All the drums and cymbals were carefully mounted on supports.

The reception was held at Harborside / Exchange Place on the Hudson River waterfront with fabulous views of Manhattan and Downtown New York.

Lilies and Chrysanthemums Wedding Cake

A simple three tier light peach color fondant wedding cake with pearlised white fondant ribbons. Inside are tiers of lemon cake and lemon coconut cake, both with passion fruit cream filling, and also a red velvet cake with cream cheese filling.

Bouquets of orange lilies and pink chrysanthemum sugar flowers decorate the cake. 

Delivered to a wedding party at Casa Nova restaurant in the Ironbound district. Trouble with that is we always want to stay on to eat, always delicious there!

Green Bow and Diamond Brooch Wedding Cake

A four tier yellow vanilla wedding cake with tiers of Oreo cream filling and Callebaut Belgian Dark Chocolate cream filling.

Several tiers have a lattice pattern, all are encircled with green fondant ribbons tied in a bows and a diamond brooch to finish off.

Also we placed a cake topper on the cake depicting a biker couple!

Delivered to a wedding reception at the Galloping Hill Inn in Union NJ.

Peony Wedding Cake with Mini-Cupcake Display


I had fun with this bright and beautiful wedding cake, decorated with piped flowers and an open Orange Peony sugar flower. The cake sat on top of a display of assorted mini-cupcakes, on a wooden hexagonal shape cake stand expertly designed by the bride's father!




The cake is red velvet with our cream cheese deluxe filling, that has grated white Callebaut chocolate. The cupcake selections also included lemon coconut cake with passion fruit cream filling, chocolate fudge cake with amaretto moccha filling and a drizzle of salted caramel.




Rat's Restaurant at Grounds for Sculpture in Hamilton NJ has to be one of our favorite venues to deliver a cake. Special thanks to Christopher Carrell for making this happen, and to our special helper who enjoyed the delivery, with an opportunity to tour the picturesque garden setting and fascinating sculptures!

Blue and Chocolate Brown Damask Wedding Cake


Last week I was working on a five tier light blue fondant wedding cake with chocolate brown damask patterns to display at our Cake Fiction cakery in Union NJ.
Each tier has a different damask or scroll design, I love the elaborate finish that can be achieved, even if it is a nerve racking process to get everything aligned!
On top is a fondant monogram, with small sugar flowers.

Quilted Wedding Cake with Diamond Studs


I made this three tier fondant wedding cake finished off with a two ring silver cake topper that the bride and groom chose.

The two round tiers have a diamond quilting pattern with tiny edible diamond studs, while the hexagon middle tier has a blue monogram piped with royal icing.

A fondant ribbon surrounds the base of each tier, and I lightly dusted it with pearl dust to give a slight sheen.




We baked a red velvet cake with cream cheese filling and almond pound cake with dulce de leche cream filling.

Delivered the cake to the Titanic Restaurant in the Ironbound district.

Jasmine Sari Hexagon Wedding Cake


Our bride requested a hexagon shape wedding cake covered in ivory color fondant. Inside the six tiers are layers of almond pound cake with dulce de leche cream, and chocolate fudge cake with Cannoli filling.

A fondant sari with red pearls is draped around the cake, which is then decorated with clusters of lilac and white jasmine sugar flowers. On top is a plum colored vase molded from sugar and containing a jasmine bouquet.

Delivered to a reception at the Royal Albert Palace in Fords NJ.

Rock Candy Wedding Cake


Now this was a cake that tested my self control, I love rock candy!

The bridal couple wanted something to signify a joint childhood memory of fun vacations at the beach. I used rock candy pieces in red, orange and yellow colors to decorate this four tier white wedding cake. On the top tier is more rock candy in a star burst shape!

Inside the tiers are red velvet cake and white vanilla cake with Madagascar vanilla bean and chocolate mousse fillings. We delivered the cake to a reception at the Above restaurant in the heart of South Orange NJ.

Mosaic Wedding Cake Inspired by Gaudi


Our bridal couple were crazy about Barcelona and in particular fascinated by the architecture and designs of Antoni Gaudí in Park Güell. So I designed for them a four tier wedding cake with a swirling mosaic pattern.


Inside are layers of almond pound cake with amaretto moccha filling and covered in an eggshell color fondant. The cake is then decorated with cut out shapes of fondant in shades of pink and purple, with other pieces forming a ribbon around each tier in shades of blue and turquoise.

Hydrangea Wedding Cake with Violet Drapes


Our bride requested a violet colored four tier wedding cake wrapped around with darker purple drapes, periwinkle color fondant ribbons with small 1mm beads and bouquets of blue sugar hydrangeas.

The cake flavor combinations are yellow vanilla with chocolate cream filling and red velvet cake with cream cheese filling. I delivered this to a wedding reception at Giorgio's Restaurant in South Orange NJ.

Red Maple Leaf Wedding Cake


A four tier round ivory colored wedding cake with red velvet cake and cream cheese filling. A chocolate ribbon and red fondant pearls surround each tier. Four branches with red and orange sugar maple leaves cascade down the side of the cake. The cake was delivered to a Fall wedding reception at the Orange Lawn Tennis Club in South Orange NJ.

Cymbidium Orchids Purple Wedding Cake


A square three tier wedding cake for a reception at the Orange Lawn Tennis Club in South Orange NJ. The bride selected multiple flavor combinations: a lemon coconut cake with passion fruit cream filling, red velvet cake with cream cheese filling, and a straight coconut cake with key lime buttercream. The cake is covered in a purple fondant, decorated with brushed embroidery flowers and additionally with sugar Cymbidium orchids.

Peacock Feathers and Red Roses Wedding Cake



A peacock feather theme three tier wedding cake delivered to the Freeman Gardens in Glen Ridge NJ. The bottom tier is Coconut cake with Passion Fruit cream filling and the upper tiers are Chocolate fudge cake with Madagascar Vanilla Bean filling.

Ivory colored fondant covers the cake, which is decorated with peacock feather eye shapes and swiss dots, pull strings piped around an elevated base, a bouquet of red sugar roses and with real feathers as the cake topper.

Violet and Blue Hydrangeas Wedding Cake


A three tier round wedding cake delivered to the Twin Maples Historic House in Summit NJ. The cake is chocolate fudge with Madagascar vanilla bean filling.

The violet colored fondant is surrounded by a light blue fondant ribbon and with tiny pearls on each side. It is then decorated with bouquets of hydrangeas in different shades of blue.

Topsy Turvy Raspberry Lemon Wedding Cake


A four tier topsy turvy wedding cake for a reception held at the Inn at Mill Race Pond in Hope NJ.

The bride chose vanilla cake with raspberry cream and lemon curd filling, covered in a pale yellow fondant. She also requested the top tier be extra wonky!

Sugar hydrangea flowers encircle each tier and then a bouquet of hydrangeas, roses and lillies top the cake.

Calla Lillies and Roses Wedding Cake


A three tier round wedding cake with lemon coconut cake and passion fruit cream filling, definitely a favorite combination this year with my brides.

The cake is covered in a pale violet fondant, each tier is surrounded by darker violet fondant ribbon and then covered with calla lillies and lavender colored roses cascading down its front.

Orange Vanda Orchids Wedding Cake



The fruit of my labor from the previous blog post is shown here: A square three tier wedding cake made of lemon coconut cake with passion fruit filling, and on the top tier a pure vanilla cake with dulce de leche cream filling.

The hand crafted orange sugar Vanda Orchids cascade down a branch on the front of the cake covered in light yellow buttercream. In addition, some scattered musical notes are piped around the cake to match the theme of this wedding reception at the Shanghai Jazz restaurant in Madison NJ.

How to make Vanda Orchid sugar flowers

I thought it would be fun to share with you how I make sugar flowers, in this case I am working on some bright orange Vanda Orchids for a wedding cake.

First of all I gather together the necessary tools: small rolling pin, ball tool, cloth covered wire (20g and 24g wire), Vanda Orchid cutter set (throat and petals), veiner, petal mat with clear cover, a thick and a thin foam pad, plus floral tape.



I color and roll out sugar paste to cut out the throats. On the thin pad press the ball tool into the center of the upper section, cupping upwards. Then I ruffle the sides of the lower section. For the tongue, roll out a ball of sugar paste into a small cylinder shape.

With a needle tool mark a line in the center. Insert a damp hooked wire (20g) into one end, pass it through the center of the throat, stick it with a dab of sugar glue and let the whole thing dry having placed them in the forming trays (egg cartons!)



For the petals, roll out the sugar paste, press with a Vanda Orchid veiner, cut out the petal and insert a wire carefully. On the thin foam pad, lightly thin the edges with a sugar flower ball tool. Let the petal dry flat and repeat with the rest of the petals (5 per orchid).



Each set of petals and the throat is assembled by wiring the pieces together and then wrapping white floral tape around the wires. Next I dust the flowers with petal dust to match the desired color scheme.




Here is a close up of the final result. For the wedding cake I was preparing, I attached each flower to a long brown stem.

Seashells and Cattleya Orchids Wedding Cake


A perfect aqua colored cake for a summer wedding at the Orange Lawn Tennis Club in South Orange NJ. Groups of shells and pencil starfish decorate each tier, with a small bouquet of Cattleya orchids on top. Each of the orchids contained a small fondant pearl. Inside are two tiers of chocolate pecan cake with chocolate cream filling, while the others were red velvet cake and cream cheese filling.
