Stargazer Lily Wedding Cake with lace ribbon and sugar butterflies

It's wedding season, and sorry to say I don't have enough time to post all the cakes we've been doing, although I try to put some of them up on Facebook when I get a chance!

This four tier white wedding cake has fondant lace ribbons around each tier and piped swiss dots. Light yellow sugar hydrangeas form small bouquets with the Stargazer lilies. The bride also requested yellow/orange sugar butterflies to finish off the decoration.

Inside is white cake with dulce de leche cream filling.

We delivered the cake to Bambu Lounge in Elizabeth NJ.

Jimmy Choo Shoe Cake with Bridal Shower Bouquet

I just love Jimmy Choo shoes! I created a silver high heel shoe with edible rhinestones to sit on top of a two tier ivory fondant cake. The white vanilla cake tiers have dulce de leche cream filling. A bouquet of sugar calla lilies tied with pink fondant ribbons finishes off the design, which is also decorated with piped Swiss dots.

Surf Dude Bar Mitzvah Cake

How do you catch the perfect wave? Build it with funfetti cake and dulce de leche cream filling!

We created this design for a Bar Mitzvah at Powerhouse Studios in East Hanover NJ.

The designs were all based on the guest of honor's own surfboard logo.

Broadway Rock Candy Bat Mizvah Cake

Our Bat Mitzvah girl is a Broadway fan and wanted a fun, bright cake with a dancing figurine to top off the cake delivered to Espace in New York, NY.

The four tiers are a mix of pink velvet cake with cream cheese filling and yellow vanilla cake with dulce de leche cream filling. Covered in pink and orange fondant then topped with pink bows. Each tier is encircled with Rock candy.

We included some souvenirs of her favorite shows: a ticket to Wicked, her name in the Hairspray font anda personalized copy of Playbill.

Labrador Groom's Cake

A couple came to visit me together, unusual for a Groom's cake. They wanted me to create a 
Labrador Groom's cake, a replica of their own pet Marley, for their celebration at the Westmount Country Club in Woodland Park NJ.

Inside is chocolate fudge cake with dulce de leche cream, covered in fondant and then painted with edible food spray to get the right color effect. The hardest part as always are the eyes, which I needed to shine and add life to the dog!

Tilting Split Sand and Sea Birthday Cake


Here was a challenge. One of our customers, inspired by Christopher Garren's Opposites cake on Amazing Wedding Cakes, asked us to make a split three tier birthday cake with a sand and sea theme! 

We designed a stable base to allow sufficient support for the tilting design, split down the middle.It is covered in edible sand and seashells! The bottom tier is a sand color fondant with flower cutouts, while the top tiers are a blue sea fondant with waves and fishes.

The tiers have almond cake with dulce de leche cream filling, red velvet cake with raspberry cream filling and chocolate fudge cake with cappuccino cream filling.

Created for the birthday of two twins, so we incorporated a series of favorite items for each one: Spiderman, fairy, high heel sandal, Converse shoe, Spongebob CD, a bikini. Delivered to a party in Clifton NJ.

Giuseppe Zanotti Blue Platform Sandal Birthday Cake

For a surprise birthday cake we started off discussing with my customer a set of Tiffany boxes and a pump. However through the creative process we realized that a favorite color peach needed to be incorporated into the design, so that explains the boxes! The square box is tied with a white fondant bow and pinned with a silver dragee brooch, with other edible dragees scattered around.

On top I placed a Tiffany blue colored Giuseppe Zanotti platform sandal shaped in fondant. I am particularly proud of the hand painted logo, it came out perfect!

Inside is a moist coconut cake (we discovered a great supplier) with the always popular dulce de leche cream filling.

Cookie Monster Birthday Cake


Yummy, a blue buttercream Cookie Monster cake carved from yellow vanilla cake with dulce de leche cream. He is sitting on a round green fondant cake.

And we also included a few dozen chocolate fudge cake Cookie Monster cake pops. Delivered to the Children's Museum on Staten Island NY.

Fire Station and Engine Birthday Cake


It was quite cool delivering this cake to the Princeton Junction Fire Company, a really exciting location for a small boy's birthday party. The perfectly clean building houses a dozen gleaming fire trucks and support vehicles.

We made a white vanilla cake with dulce de leche cream filling, the bottom tier decorated as a fire house, the second tier in traditional dalmation spots and with a fire engine on top! Complete with fire hyrants and fire hose.

Minnie Mouse Car Birthday Cake


The hardest thing with sculpting figurines is getting the right expression, especially with such well known characters as Disney ones! Minnie Mouse has a particular look, with her eyes close together just set above her nose. But I noticed that the nose is not round, it's oval and protrudes! Took me a few attempts to get it right!

Now inside the pink fondant exterior, carved into the shape of a special car is lemon coconut cake with dulce de leche cream filling. The Minnie Mouse figurine sits smiling at all the kids! Delivered to a first birthday party in North Arlington NJ.

Hello Kitty and Bows Bridal Shower Cake


Just made this three tier cake for a bridal shower. It was so hard deciding on a flavor that our customer picked a medley of red velvet cake, chocolate sponge with yellow cake and chocolate fudge cake with a selection of cream cheese filling, dulce de leche cream filling and dark chocolate cream.

The white and multi-colored fondant cake is decorated with sugar flowers and butterflies, as well as a cute touch, forks and spoons around the base of each tier. Hello Kitty sits a top the cake with a pink fondant bow to match the others.

Selection and Design of your Wedding Cake


A lot of brides are on a learning curve through their wedding planning. I thought it would be good to use this beautiful Green Cymbidium Orchids Wedding Cake to show how we go about the design process and help them create what they dream of for their big day!

I always recommend a tasting session for wedding cakes, and encourage bride, groom and some close family or friends to participate. That makes the tasting a really fun event, the Groom's often come in skeptical and walk out passionate about cake and the choices they make! They chose tiers of almond cake with dulce de leche cream, and chocolate fudge cake with white chocolate cream filling.

The tasting session usually lasts 20-30 minutes, which then gives us another 30 minutes to talk through and sketch a design.

I ask the bride to bring whatever material swatches, color cards, invitations, photos or other elements that we might incorporate into a design. She actually lent me the original stamp she used to make her own hand-creafted invitations. So by stamping our fondant ribbons with that design we obtained a perfectly personalized touch.






We ended up creating four tier ivory fondant wedding cake with a quilted diamond pattern and silver beads. A purple fondant ribbon and embossed ivory ribbon surround each tier.



The majority of our brides choose sugar flowers that I make. However in this case the bride chose Fresh Cymbidium Orchids to finish off the cake, which we ordered from Lotus Petals in Maplewood NJ.

Delivered to the Orange Lawn Tennis Club in South Orange NJ.

Squirrel and Owl Birthday Cake and Cookies



We designed this nature theme cake for a birthday party at the Cora Hartshorn Arboretum in Short Hills NJ.

The bottom tier has chocolate fudge cake and Madagascar vanilla bean filling, the top tier is a white vanilla cake with dulce de leche cream. We sculpted a fondant squirrel with a bushy tail holding an acorn and a blue owl to match the invitations. Little birds and Belgian chocolate twigs complete the decoration.

We also made a dozen matching owl cookie favors with blue fondant.

Quilted Wedding Cake with Diamond Studs


I made this three tier fondant wedding cake finished off with a two ring silver cake topper that the bride and groom chose.

The two round tiers have a diamond quilting pattern with tiny edible diamond studs, while the hexagon middle tier has a blue monogram piped with royal icing.

A fondant ribbon surrounds the base of each tier, and I lightly dusted it with pearl dust to give a slight sheen.




We baked a red velvet cake with cream cheese filling and almond pound cake with dulce de leche cream filling.

Delivered the cake to the Titanic Restaurant in the Ironbound district.

Camellia Wedding Cake with Cross Hatching


Our bride wanted a three tier white wedding cake with camellia sugar flowers, that have a light blue center. She chose apple pecan cake with dulce de leche cream filling on the bottom tier, and lemon coconut cake with key lime cream on the others.

White fondant covers the cake and then I piped a cross hatching pattern with royal icing, adding blue beading at each apex.

Jasmine Sari Hexagon Wedding Cake


Our bride requested a hexagon shape wedding cake covered in ivory color fondant. Inside the six tiers are layers of almond pound cake with dulce de leche cream, and chocolate fudge cake with Cannoli filling.

A fondant sari with red pearls is draped around the cake, which is then decorated with clusters of lilac and white jasmine sugar flowers. On top is a plum colored vase molded from sugar and containing a jasmine bouquet.

Delivered to a reception at the Royal Albert Palace in Fords NJ.

Damask cake with chandeliers and red roses


For a surprise birthday I created this four tier cake decorated with chandeliers, piped strands and a black damask pattern. The third tier is a red quilted cake with silver beads. On top is an arrangement of red roses and a fondant monogram.

Inside are tiers of white vanilla and red velvet cake with Madagascar vanilla bean, cream cheese and dulce de leche fillings.

The cake was delivered to Buddokan restaurant at the Chelsea Market in Manhattan.

Christian Louboutin Shoe Cake


I delivered this two tier cake to a 60th birthday party at the Galloping Hill Inn in Union NJ. The bottom tier is red velvet cake with dulce de leche cream, and the top tier is white vanilla with Belgian chocolate cream filling.

Pink and chocolate fondant covers the cake, decorated with a band of zebra print shapes and polka dots in chocolate fondant. On top is a brown Christian Louboutin shoe with a pink bow, the classic red sole and inside you can see the Louboutin label.

Slot Machine Cake for Sixtieth Birthday


We made this slot machine cake to celebrate a 60th birthday, for a casino fan. Inside are yellow vanilla cake with dulce de leche cream, and lemon cake with white chocolate cream filling.

The fondant is sprayed with a silver food coloring. Gold chocolate coins are pouring out of the machine. This is a popular design, I made two of them this week! Everyone's a winner!

Birthday Presents and Jungle Animals Cake


I made this two tier orange and blue cake for a birthday party at the Turtleback Zoo in West Orange NJ. Red velvet cake with cream cheese filling on the bottom tier, and yellow vanilla cake with dulce de leche cream filling on the top. The cake is covered in matching color fondant stripes, polka dots, with jungle animals (giraffe, lion and elephant) and gifts.

I also baked two dozen animal cookies as favors for the guests.
