Quilted Roses Golden Anniversary Cake


These golden anniversary cakes are always such a pleasure to bake. Here is a two tier white vanilla cake with chocolate mousse filling. Covered in white fondant, with a quilted diamond pattern, golden dragees, a scrolled number 50 and bouquets of yellow and gold sugar roses. Delivered to a 50th Anniversary party held at the Spanish Tavern in the Ironbound.

Selection and Design of your Wedding Cake


A lot of brides are on a learning curve through their wedding planning. I thought it would be good to use this beautiful Green Cymbidium Orchids Wedding Cake to show how we go about the design process and help them create what they dream of for their big day!

I always recommend a tasting session for wedding cakes, and encourage bride, groom and some close family or friends to participate. That makes the tasting a really fun event, the Groom's often come in skeptical and walk out passionate about cake and the choices they make! They chose tiers of almond cake with dulce de leche cream, and chocolate fudge cake with white chocolate cream filling.

The tasting session usually lasts 20-30 minutes, which then gives us another 30 minutes to talk through and sketch a design.

I ask the bride to bring whatever material swatches, color cards, invitations, photos or other elements that we might incorporate into a design. She actually lent me the original stamp she used to make her own hand-creafted invitations. So by stamping our fondant ribbons with that design we obtained a perfectly personalized touch.






We ended up creating four tier ivory fondant wedding cake with a quilted diamond pattern and silver beads. A purple fondant ribbon and embossed ivory ribbon surround each tier.



The majority of our brides choose sugar flowers that I make. However in this case the bride chose Fresh Cymbidium Orchids to finish off the cake, which we ordered from Lotus Petals in Maplewood NJ.

Quilted Ivory Wedding Cake with Calla Lilies


Our bride chose a round three tier chocolate almond cake with amaretto moccha buttercream as the filling. The cake is covered in ivory fondant with a quilted pattern and small groups of sugar calla lilies.

The bride and groom also selected a ceramic ring shaped cake topper with two hands clasping a heart, and a large silver stand to display this classic wedding cake, which we delivered to the Navesink Country Club near Red Bank NJ.

Quilted Ivory and Black Wedding Cake with Monogram


A four tier quilted diamond ivory wedding cake with black fondant ribbons. Swiss dots are piped at the apex of each quilt and hand painted in edible silver food coloring. The cake has a fondant silver monogram topper.

The bride and groom chose combinations of chocolate genoise with orange chocolate filling, pure white cake with Dulce de Leche cream and red velvet cake with white chocolate ganache.

We delivered the cake to the Grand Summit hotel here in New Jersey.

Quilted White Wedding Cake with Blue Ribbons


We delivered this elegant offset three tier square wedding cake to The Avenue in Long Branch NJ, a fabulous beach setting. The bottom tier is coconut cake with dark chocolate ganache and Madagascar vanilla bean buttercream, while the top tiers were vanilla and chocolate fudge cake layers with raspberry mousse.

The off white fondant is quilted with a diamond pattern and every apex has a sugar pearl. A blue fondant ribbon surrounds each tier and then a topper selected by the bride finishes off her ideal wedding cake.

Pink Bows and Butterflies Baptism Cake


A three tier fondant cake for a Baptism celebration in East Brunswick NJ.

The first tier has vanilla and chocolate fudge cake layers with Cannoli cream filling. The top two tiers are both red velvet cake with cream cheese filling.

The pink fondant is embossed with a quilted diamond pattern and swiss dots, pink fondant bows and sugar butterflies surround the cake, which is topped with a rosary decorated with tiny flowers.
