Camellia Wedding Cake with Cross Hatching

Our bride wanted a three tier white wedding cake with camellia sugar flowers, that have a light blue center. She chose apple pecan cake with dulce de leche cream filling on the bottom tier, and lemon coconut cake with key lime cream on the others.

White fondant covers the cake and then I piped a cross hatching pattern with royal icing, adding blue beading at each apex.

Pinstripes Wedding Cake with Hydrangeas

A three tier Meyer lemon cake with Madagascar vanilla bean filling. The white fondant is covered in piped royal icing pinstripes, surrounded by small fondant pearls and decorated with a bouquet of white and lavender colored hydrangea sugar flowers. We delivered this cake to a garden wedding in Maplewood NJ.

Ivory Wedding Cake with Brush Embroidery

An ivory colored fondant wedding cake with three square tiers and decorated with floral design brush embroidery in white.

Starting by tracing a pattern onto the fondant, then with royal icing I pipe around the pattern towards the center of the design. Before this outline is dry I brush the outline with a damp paintbrush. Once it is dry I go back and pipe in veins on each of the leaves. It's a long process, requiring a steady hand, but just love the final effect.

Around the base of each tier I placed a string of small sugar pearls. The cake sits on a fondant covered cake board which has crystal feet.
