White Roses with Ivory Drapes Wedding Cake

The Terrace in the Sky restaurant in Manhattan was the venue for an elegant New York wedding celebration.

The bride asked me recreate a hexagonal ivory colored cake that she loved, which had white sugar roses and hydrangeas. The four tiers of red velvet cake have a raspberry buttercream filling and a thin layer of raspberry preserves. Each tier is covered in an ivory fondant, a series of scrolls are piped in icing and then adorned with fondant drapes. I added some leaves to give the colors a contrast, and the base of the cake is surrounded by ivory fondant pearls.

This was truly was a white wedding, the cake was delivered through a blizzard!

Poinsettia Christmas Cake

This Christmas Cake is classic example of enriched bread that has been a staple of British holiday celebrations for many centuries. The cake is filled with an assortment of dried fruits, nuts, sugar fruits, spices and marinated over 6-8 weeks with a cupful of brandy. The cake is covered with rolled white fondant and topped with three red sugar paste Poinsettia flowers.

Ivory Wedding Cake with Brush Embroidery

An ivory colored fondant wedding cake with three square tiers and decorated with floral design brush embroidery in white.

Starting by tracing a pattern onto the fondant, then with royal icing I pipe around the pattern towards the center of the design. Before this outline is dry I brush the outline with a damp paintbrush. Once it is dry I go back and pipe in veins on each of the leaves. It's a long process, requiring a steady hand, but just love the final effect.

Around the base of each tier I placed a string of small sugar pearls. The cake sits on a fondant covered cake board which has crystal feet.

Fuchsia Orchids and Callas Wedding Cake

Our bride chose a color theme of ivory and light pink, and we made a sugar flower arrangement to match her bridal bouquet. White and fuschia colored Cymbidium orchids are placed on top of the cake, encircled by white callas. The Callas ere brushed with a dash of petal dust to bring out the pink and blend with the softer ivory color of the cake.

The cake was red velvet and cream cheese filling with lemon coconut cake and passion fruit curd filling on the other tiers. The ivory fondant is surrounded by a pink fondant ribbon and pink pearls. I delivered the cake to Scotch Plains NJ.

Golf Cart Cake

Our customer wanted a specialty cake to celebrate her husband's 70th birthday party. They also frequently visit a holiday home in Arizona and are golf fanatics, so we built a golf cart cake based on their E-Z-GO buggy. Orange chiffon cake with orange curd filling is covered in an ivory fondant. A red and black golf bag made with sugar paste and a set of golf clubs are on the back of the cart, which also has NJ and AZ licence plates!
